What do I add to gingerbread that has dried out?

I made gingerbread twice, both times I divided the bread in half and by the time I finished rolling out and cutting out the 1st half, the second half is dry and cracked throughout.. How do I fix this or prevent this?

keep the unused portion wrapped in clingfilm (plastic wrap).
