Can you could store gingerbread men in the fridge after baking? Or would it harden and turn out inedible?

I would say yes, you can store them in the fridge. I make all my gingerbread cookies a month in advance and then store them in the freezer. When I'm ready for them, I just take them out and let come to room temp and no one knows that I didn't just bake them. So, I would think putting them in the fridge would be no different. Just make sure they are in an airtight container or freezer ziplock bags.
