making the gingerbread ahead of time

Is there any way I can bake gingerbread by the pan full and have the kids cut them out afterwards once it's baked? I have a class coming up for engineering and I need to make the dough ahead of time..

Is this feasible to do so? Can I bake the dough and not bake it all the way so they can cut through it? Suggestions, please..
