An "edible" gingerbread house could last up to ten years providing its kept in a cool, dry area and covered to prevent dust, bugs, etc. from taking up residence. Remember that humidity and moisture are a gingerbread houses' greatest enemy.

Gingerbread lasts a long time if it is crisply cooked and you seal it away in a plastic bag and store in a dry place. You can keep in the freezer for a good while. If you want to keep permanently then coat with paint sealer - clear and you will have tree ornaments for a very long time. Stick a hole through it to use for a hook to hang on the tree and then shelac or coat with glossy sealer. Make sure to seal them away so that grimlins (dogs, cats, mice, roaches) cannot get to them.
