I want to make some gingerbread men for my sons birthday party a few days before the party, just wanted to know how long they keep for if kept in the pantry. Thankyou
I made gingerbread cookies in December and stored the leftovers in a cookie tin in my hallway over the winter months. It is July and they are still soft and taste good. I don't know if there is any danger from eating them, but they sure do taste good. I'm going to toss them because it is an embarrassment to serve them and I cannot eat them due to diet.

Most people agree that gingerbread cookies or houses made from scratch can be safely eaten for at least a week.
Cover your cookies with plastic wrap (or store in an air-tight container) to keep them free of dust and critters. If they feel a little hard or stale when you're ready to eat them, wrap in a damp paper towel and microwave for a few seconds to turn them warm and soft. This can even be done with decorated gingerbread men (for just a few seconds though.) Just do a test on 1 first to be sure your decorations don't melt.
