Can you substitute Olive Oil for Butter?

Can you substitute Olive Oil for Butter? I am making a Gingerbread Cake for a vegetarian guest, so I need to know if there is some type of butter substitute that is compatible to this recipe. Thank you.

You can substitute equal parts of shortening for the butter. It makes the gingerbread a bit crispier as well

Substitutes for Butter

I might use vegetable or Canola oil instead of Olive Oil. Wikipedia says:

If a recipe calls for one stick of butter (1/2 cup), use 1/3 cup of oil.

They also mention nut butters (from almonds, cashews, or other nuts) as a substitute for butter. Use the same amount listed for butter in the recipe.

Applesauce is also a common substitute for butter in sweet baking recipes, but I'm not sure it would yield a hard enough gingerbread cookie to build a house out of. Applesauce might work as a substitute for butter in our gingerbread cake or soft gingerbread cookie recipes.
