hi i have a traditional gingerbread recipe just wondering if wrap up so air cant get at it all pretty with cellophane how long should it last for? And can u freeze it before decorating it for a week or two?
You can definitely freeze gingerbread, both before cooking (in the dough stage) and after baking into gingerbread cookies. I'm not sure how royal icing holds up frozen or if it melts some when coming back to room temperature, but I would guess that it would do fine.
So, if you have a freezer large enough, you should be able to freeze a fully assembled house to make it last a few months.
