bake before or after you decorate the men?

Does anyone know what works best? To make the gingerbread before or after you decorate. Many icing recipes call for egg white but I don't feel great about my 2 yr old son eating raw egg. Does any one have a great recipe? I am thinking to bake before would set the icing?
