What happened!!!?????

For the first time in all the years I've baked ginger bread, this time it turned out with hard little kernels throughout. They were in every chew. UGGH--awful!! Why do you think this happened?

Probably the nutmeg

I have had that happen in my baked goods when I have used a sub-par brand of nutmeg, and the spice was not ground properly.

I purchased the brown sugar fresh from the supermarket the day before I baked it. Since it did not bear an expiration date, I made sure to taste it before I used it. It tasted fresh, although it was an off-brand. Something I'd never heard of, but there was no Domino dark brown sugar left on the shelf.

I wondered if maybe, one of my spices was too old. I thought it might have been the Ginger, so I've tossed it out.

Did you use brown sugar that may have been hard? I know that can happen if the brown sugar is not fresh, even if you try to soften it before you mix it in.
