I have worked a bit with fondant and I think the one drawback is you would want to be certain your surface is smooth. The funny thing about fondant is that it looks very substantial(thick) I always am tricked into thinking it will "cover" any imperfections, when actually it highlights them. That being said, I have been thinking of using it for a roof on a conservatory. Please post your results and pictures. Good luck!
