My son and I just finished our fantasy ginger bread castle and boy am I tired. We designed and built it in just 2 days. I don't know what we were thinking. The design was taken from an online game that my son plays. Its not really a castle but the entrance gate to a city. We used just the basics gingerbread, icing, and some fondant. Also added some shredded coconut for the snow. The final piece was going to have a dragon sitting on top one of the towers but we ran out of time.
Overall I think we did a good job. Next year we'll plan ahead and certainly give ourselves more time.
