We are thinking about doing a gingerbread house next Christmas, but no one really likes to eat gingerbread. In addition, construction may take a few weekends and I don't want something sitting out that will attract pests. So, is there a good gingerbread-like material that will work?
I have made a house before from sugar cookie dough, it is a little more fragile than gingerbread but it does work.

If you decorate it enough, cardboard looks an awful lot like gingerbread! I've used cut up cardboard boxes to test out my gingerbread templates. The thickness is about right too.

I have seen in ladies home journal and other magazines, gingerbread houses made from already baked cookies (I guess you could make square stackable cookies without buying). I have also seen castles made from sugar cubes and icing. experiment away.
