What would cause the royal icing on gingerbread houses to not hold it together. We put together 20 houses and 3 days later they all started to fall apart.

Humidity is the bane of all gingerbread. I'd suggest using a less traditional dough that doesn't use shortening or leavening agents. You can also try "painting" the gingerbread with clear piping gel before adding any icing or decorations. It gives it an extra sticky surface to adhere to.

The problem is probably either humidity (which gingerbread hates) or not enough royal icing. Are you moving your pieces around alot. That could also account for gingerbread weakness. Hope this helps.
