| gingerbread like brandy snap

I made my gingerbread mix three days ago and now I have gone to use it. My gingerbread is a lovely dough and I am able to cut into the correct sizes for my gingerbread house, but when cooking the mix melts out across the tray, and then dries like a brandy snap product, any ideas welcome...
