baking ahead

Ginger is a preservative of sorts and you can bake the pieces several days ahead of decorating and putting up ......IF!... there is not going to be many humid - damp kind of days coming up. Gingerbread can soak up moisture out of the air as do most cookies. Recommend that you put the on a flat surface (the pans you made them on will do nicely) - covered in aluminum foil and covered with foil. Place in the unlit oven to store or any place place that it is dry and somewhat warm (-not too hot or it will dry out completely.)
