This is our second gingerbread house we made this xmas season. The first one collapsed while we were putting white icing on the roof. The kids aged 8 and 9 enjoyed decorating the house (with the help of mummy of course). Here is the photo.
I'm by no means a profession but I once took orders for half a dozen houses as a church fundraiser. Living in coastal Australia I had big issues & STRESS with houses collapsing until I lined them with corrigated cardboard (from fruit cartons). Cut the cardboard the same size as your wall templates (no need to do the roof or smaller items such as the chimney, cover with aluminium foil, then "glue" the gingerbread to it with royal icing before you begin assebly & let the summer humidity soar!
This year I used "Corflute" to line the house. It's even stronger than cardboard, doesn't need to be covered with foil & I reckon I should be able to wash it & re use it.
I believe that Corflute is also know as corrugated plastic, twinwall platic, corriboard, Coroplast, Correx, Corriflute, Polyflute & Twinplast. (Thanks Wikipedia)
Corflute is used for realestate signs here in Australia.

Wow, what an excellent well decorated Ginger Bread House ...... can't wait to view it in person this coming friday's gathering! 100% marks for a 2nd bake!
